Egg Sandwich

This morning I have a newborn photo session at 10:30am (and they usually last anywhere from 2-5 hours) so I need something that will fill me up for awhile. This morning we tried making fried eggs with coconut oil. I just bought coconut oil after reading that it was a good alternative to olive oil, and figured I would try it out. Usually eggs cooked with olive oil (compared to butter) taste bland to me, so  I was wondering how the coconut oil would work. (I was hoping it wouldn't taste like coco-eggs though...) Turns out it worked really good, and me and Mark both agreed that the eggs could easier (didn't stick) and tasted better than when we have used 'evoo' in the past! 
Sandwich served on fiber 1 - 100 calorie whole grain bread (100 cal for 2 slices!), topped with cheese made with 2% milk, and some chopped apples. 
Now lets hop this holds me over until lunch, and that this baby cooperates for her photos :)
