DIY Rotisserie Chicken!


I LOVE LOVE LOVE this recipe! Everyone should make it BECAUSE, #1 it is DELICIOUS, #2 it is easy, and #3 it makes a bunch of meals in one. We have been making this Rotisserie Chicken in the Crock Pot on Sundays for the past couple weeks, and then using the chicken for lunches and meals for the next few days (ie: chicken for sandwiches, pizzas, salads, quesadillas, etc!)

What you do:

1.) Buy a chicken. ;)



2.) Make your significant other rinse the chicken ('cause that shits gross)

3.) Make 4-5 Balls of aluminum foil, and place in the bottom of your crock pot for your chicken to sit on. An aluminum lounge chair if you will. Then put in 1/2 cup of water on the bottom.



4.) Take all your spices and make a paste (you can use this recipe here: http://busy-mommy.com/2010/02/how-to-make-your-own-rotisserie-chicken.html ) I have found you can use anything, and it tastes good. This is what I used today:



5.) RUB IT ALL OVA THIS CHICK (put chicken breast side UP!)


6.) Cover and cook on low for the day ... (see recipe for exact cooking times)

7.) VIOLA a tasty DIY Rotisserie Chicken with meat for a week!


Lots of leftovers for the week! 


Dinner tonight: Chicken served with broccoli and couscous/lentils. Couscous cooked it chicken broth and spices and lentils.
